Eggplant

I was grocery shopping with my 2 and 5 year olds and they found an eggplant, which they've never eaten, so I bought it. A few days later I was planning on preparing it as Eggplant Parm, but my hubby and I do not like spicy things, and I wasn't sure if the kids would take to it, so instead I chopped it up into bitesized pieces and threw it into a tomato sauce with ground beef, carrots, onions, etc and some whole wheat rotini.... They gobbled it up! The lil kick that eggplant has to it was lessened, and they thought it was cool to eat an "egg plant." lol
