My daughter is 14 and has really gotten into cooking since watching Rachael (thanks!). She found a recipe that is so incredibly easy and she wanted to share...1 large can of drained sweet potatoes or three large baked and peeled, add 3 medium ripe bananas, 1/2 cup sour cream, 1 tsp vanilla, 2 tps, cinnamon, and 1 egg. Mix with mixer a couple of minutes. Spray a baking dish with a non-stick spray and bake @ 350 for about 20 minutes or until fluffy! So healthy and kids love it!
