Richard Blais' Pulled Turkey BBQ Sammies with Brussels Sprout Slaw

Serves 4

For the Brussels Sprouts Slaw:

1/3 cup Hampton Creek mayonnaise

2 tablespoons cider vinegar

1 tablespoon sugar

1/2 tablespoon yellow mustard

1/3 cup small diced apple

2 tablespoon sliced scallion

1/2 teaspoon turmeric

1 cup sliced leftover cooked Brussels sprouts

2 cups chopped turkey

1 1/2 cups Hampton Creek mayonnaise

1/4 cup water

1/4 cup white wine vinegar

1 tablespoon coarsely ground black pepper

1 tablespoon Creole mustard

1 teaspoon salt

1 teaspoon sugar

2 tablespoon minced onion

3 garlic cloves, minced

2 teaspoons prepared horseradish


For the slaw, mix dressing ingredients and fold in sliced Brussels sprouts. 

Using a smoking gun, cold smoke the turkey for a few minutes. Char the turkey on a griddle pan or cast iron. Mix remaining ingredients and add turkey. Toss and serve on Texas toast or soft rolls with slaw alongside.
